Strawberry Crepes with Cool Whip Recipe

I'm so happy the the long 4th of July weekend is finally here! I'm about to head off to New Hampshire for some good ole' fashioned summer fun, but before I go, I wanted to share my new favorite breakfast recipe! I'm pretty much addicted to it now, and I have a feeling you'll all love it too! So without further ado, I give you... Strawberry Crepes made with pancake mix and Cool Whip!



This recipe is super easy. Basically, if you can make pancakes, you can make crepes. This will make you about 24 crepes, but if you're want a smaller serving size, it's very easy to just cut the recipe in half. In a large bowl, combine pancake mix, water, sugar, and eggs, and mix well. 


Spray an 8" pan with non-stick cooking spray then pour 2 tablespoons of the mix into the pan. Make sure the mix covers the entire bottom of the pan. Cook on medium/high heat until the edges start to get a little crispy and brown. Then flip the crepe and let cook on the other side for a few moments. Repeat this process until all of your crepes are done, making sure to spray the pan between each crepe.


Slice up your strawberries into small pieces and place them in the center of each crepe.



Top off your crepe with some Cool Whip, and your sweet breakfast is ready to eat! Enjoy!
